To understand the process of doing Nigari you need to know the following: Nigari is mainly magnesium chloride, and magnesium chloride subsequently forms Natrium Chloride crystals.

The sea water is filtered and concentrated. As soon as the Natrium Chloride crystals are formed, the crystals and the water are separated with the help of a centrifuge. The water is heated and then cooled to allow the magnesium chloride crystals to settle. The layer formed by Nigari is then broken into pieces. This is a magnesium chloride of the highest quality.

Suggested use:

- As a tofu coagulant. The ratio is one teaspoon (15 g) per litre of soya drink.
